Pizza Crust from scratch!

The other day when I was grocery shopping I had a hankering for some pepperoni. Thankfully, it was sale at a great price so I snagged a bag. I've been snacking on it the past few days and then realized... HEY... I kind of want to make a pizza! I have cheese. I have mushrooms. I have some onion and pepperoni! I thought there has GOT to be a quick and easy pizza crust to make. While I have yeast, I kind of wanted something quick. Especially since this was so last minute. Well glory hallelujah I found a recipe!!!!!! I almost posted about it here but decided I better try it out first and let me just say, I could have posted it because it was deLISH!!!!

Here is the recipe (without photos... dangit!):

2 cups flour
1 tblsp. baking powder
1 tblsp. oil
2/3 cup water
1/4 tsp. salt

Preheat oven to 400 degrees. Prepare pizza pan by spraying with non-stick cooking spray. Combine dry ingredients in mixing bowl. Add liquids and stir to incorporate dry ingredients. Knead dough by hand 6 - 8 times on a lightly floured surface. Roll dough thinly. Place rolled dough onto prepared pizza pan, add favorite sauce and toppings. Bake at 400 degrees for 18 - 20 minutes, depending on crust thickness.

So for my sauce, I just got a can of tomato sauce and added some garlic powder and italian seasoning. I don't ever measure what I put in but I'm pretty sure it was about a teaspoon of garlic powder and a tablespoon of italian seasoning. I put mexican shredded cheese (like from that already shredded type packages), mushrooms and pepperoni. I was going to add onion but by the time I got that far I just didn't feel like chopping an onion. I had mess everywhere since the whole ordeal was quite unorganized! The baking time was perfect! While my crust didn't really brown, it was the perfect crispness and flavor for me. YAHOO!!! A cheapy thing to make now when I want something to eat. But now I'm out of flour.
